Tart with smoked lavaret

Serves 4 

Grease and flour a 30 cm pie dish and cover it with shortcrust pastry (can be bought ready-made = pâte à gâteau brisée). Dust the pastry with flour and stick it with a fork and then sprinkle it with 3 tablespoons of grated cheese. 

Filling:
Fry in butter,
2 chopped onions 
3 – 4 cloves of garlic 
Add,
3 – 4 tablespoons of chopped parsley 
1 tablespoon of herbs of Provence 
300 gr. of chopped and peeled tomatoes 
Salt and pepper 
Let simmer for 10 min. 
Add some chilli 
Spread the filling on the pastry 
Bake in oven 25 – 30 minutes, 200°C 
Halfway, stick two diced fillets of smoked lavaret into the filling.
