Vacherin Mont d'Or
Vacherin Mont-d’Or Switzerland AOC is made in winter in several Jura cheese dairies, particularly in Vallée de Joux. This soft cheese, a terroir product, is wrapped in a pine box.
Vacherin Mont-d’Or Switzerland AOC is a soft cheese from Vallée de Joux. It is made from thermized milk and matured for 21 days. Each cheese is packed in a pine box.
Vacherin Mont-d’Or is made from September to the end of winter, a period when cows do not produce enough milk to make large cheese loaves. The milk comes from red and white pied cows and Montbeliarde cattle which graze at an altitude of over 700 metres in the AOC zone.
Vacherin Mont-d’Or has been marketed by the Dairy Society in Les Charbonnières since 1865 and has received many awards.
A Vacherin Mont-d’Or weighs less than 3 kg and measures a maximum of 32 cm in diameter. It has been protected since 2003 with the Controlled Origin Appellation guaranteeing its origin and its manufacturing process.
